Greek lemon pasta

When Im feeling lazy and not wanting to cook this is my go-to dinner.

It’s easy light and filling. I use gluten-free pasta but you can use fresh or boxed.

Ingredients for the base of the pasta

1/4 small box Spaghetti or fettuccini noodles regular or gluten-free.

2 tbsp olive oil

1/2 fresh squeezed lemon and its zest

1 Tbsp Oregano fresh or 1 tsp ground

1 Tbsp Dill fresh or 1 tsp ground

Salt and pepper to taste

Fresh grated parmesan

You can add any fresh Italian herbs you want to this.

Top it

I top it with fresh grilled or broiled veggies such as zucchini, mushrooms, or asparagus. If you like you can add lemon grilled chicken or fish for some protein.

Directions

Add 6-8 cups of water to a saucepan and bring to a boil. Add salt to the water you always want to salt your pasta water.

Add pasta to cook til aldente.

Drain water off of the pasta

Add in the olive oil, lemon, salt and pepper, and herbs. Top will grilled veggies or meat and enjoy

Grate fresh parmesan over the top
